The Requirements for this recipe are: 1 1/2 pounds of frozen cod bone, 1 teaspoon of butter, salt and pepper, four sliced tomatoes, Swiss cheese (as desirable), and 1/2 cup of half and half.

First take away skin and bones of the cod fish. Using a kitchen wrap, dry the fish. Preheat the oven at 375 degrees. Melt the butter and coat the fish with pieces of tomato. Now, dust the cod fish with cheese desirably and add the cream. Take a dish and grease it with butter and the contents. Remove it after 25 minutes or if the fish starts to chip.

Replacing the ingredients is your choice. For instant, if you are averse to Swiss cheese, alternate with cheddar cheese. If tomatoes are not your favorite, add green peppers in its place.

I’m sure that many of you will be VERY happy to see this one on the list.

I am.  I LOVE Coffee!

Unfortunately, we are not referring to the milkshakes that pass for coffee in many of the so-called coffee bars today.  Much like cinnamon, we often add far too many fattening things to coffee to ever call it healthy.

But most of you already know that.  What you may not realize is that coffee — plain old coffee — is generally considered to be good for your health and has been cited as a fat burning food.

The caffeine in coffee helps to kick up your metabolism.  Caffeine can also jump-start lipolysis – that’s the breakdown of fat.

One to two cups a day is ideal.  Or you can add coffee to other foods during the day as shown below in our delicious recipes.

Starbucks Frappuccino

Ingredients

  • 1/2 cup fresh espresso
  • 2 1/2 cups low fat milk (2 percent)
  • 1/4 cup granulated sugar
  • 1 tablespoon dry pectin

Directions

  1. Combine all of the ingredients in a pitcher or covered container.
  2. Stir or shake until sugar is dissolved.
  3. Chill and serve cold.

Makes 24 ounces.

To make the “Mocha” variety:
Add a pinch (1/16 teaspoon) of cocoa powder to the mixture before combining.

To make espresso with a drip coffee maker and standard grind of coffee:
Use 1/3 cup ground coffee and 1 cup of water.
Brew once then run coffee through machine again, same grounds.
Makes about 1/2 cup fresh espresso to use in the above recipe.

Easy Coffee Rub for Steaks or Ribs

Ingredients

  • 1/2 cup(s) finely ground coffee
  • 1/4 cup(s) coarsely ground pepper
  • 3 tablespoon(s) kosher salt

Directions

  1. Mix coffee, pepper and salt together in a small bowl.
  2. Measure out 2 tablespoons of the rub.
  3. Using your hands, rub it evenly onto 1 1/2 pounds (6 servings) of your chosen meat just before grilling.

cinnamon[1]Adding 1/4 to 1 teaspoon of cinnamon to something you eat every day can help blood sugar get into your cells to be used for energy.  That means less is stored as fat. 

There is a whole scientific explanation behind it, I am sure.  But do we really need to know that? 

The main problem with cinnamon is that we typically enjoy it on foods that are LOADED with fat and calories (Cinnamon Sweet Rolls, anyone?) 

So the problem becomes getting the fat burning power of cinnamon without adding massive amounts of fat in the process.

Consider adding a dash to your morning coffee.  Or your oatmeal or yogurt.  

Or give these two recipes a try:

Cinnamon Bread

Ingredients:

  • 3 cups all-purpose Flour
  • 2 cups Sugar
  • 1 (5.1 ounce) package instant Vanilla Pudding Mix
  • 1/2 teaspoon Baking Soda
  • 1 1/2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 2 teaspoons ground Cinnamon
  • 1 1/2 cups Milk
  • 1/2 cup Vegetable Oil
  • 1/2 cup Applesauce
  • 2 Eggs, beaten
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Cinnamon Sugar

Directions:

  1. Preheat oven to 325 degrees F.
  2. Grease two 5×9 inch loaf pans.
  3. Mix the flour, sugar, pudding mix, baking soda, baking powder, salt, and cinnamon.
  4. In a separate bowl, mix the milk, oil, applesauce, eggs, and vanilla.
  5. Gently stir the milk mixture into the flour mixture until smooth.
  6. Sprinkle the bottoms of the loaf pans with cinnamon sugar.
  7. Evenly divide the batter between the 2 pans.
  8. Bake for 1 hour or until a toothpick inserted in the center of a loaf comes out clean.
  9. Enjoy

Cinnamon Chicken

Ingredients:

Yes — this includes butter.  But it makes enough for 4 people.  That’s one tablespoon apiece.

  • 1 Garlic Clove, cut in half
  • 4 tablespoons Butter, melted
  • 1 teaspoon Soy Sauce
  • 1/4 cup White Wine
  • 1 teaspoon Sugar
  • Parsley
  • 2 teaspoons Cinnamon
  • One whole Chicken or 2 pounds Chicken Parts (remove skin for less fat)

Directions

  1. Rub chicken well with garlic.
  2. Pour melted butter over chicken.
  3. Dust well with cinnamon.
  4. Sprinkle with soy sauce.
    Bake at 350 degrees for 30 minutes.
  5. Mix wine, sugar and parsley.
  6. Pour over chicken.
  7. Bake for another 30 minutes, basting often.
  8. Enjoy
